Scott Jurek’s “Eat & Run” inspires runner to get back on the path to better nutrition
Chuck Plunkett, Denver Post politics editor, asked if he could read the copy of “Eat & Run” by ultrarunner Scott Jurek that was sitting on my cookbook stack. Here’s why, in his words:
“I started running as a child and ran my first marathon when I was 12. I returned to running in graduate school and ran several more marathons, including the Pikes Peak Marathon – which gave me perhaps the best, suggestive taste of what it’s like to run ultras on trails in the mountains.
