In the past years, we have seen more and more people eating a gluten-free diet. But for people affected by celiac disease, it’s an obligation. In Canada, 1 in 133 people is affected by this autoimmune disorder triggered when they eat gluten.

 

But what is gluten ?

Gluten is a protein found in barley, wheat and other grains. This protein makes the dough elastic and gives bread its wonderful chewy texture.

What happens when you eat gluten while being celiac ?

When a person affected by celiac eats gluten, their body overreacts to the protein. This overreaction damages their villi*. When they are damaged, the small intestine cannot properly absorb nutrients. And the end, this can lead to malnourishment, miscarriages, infertility, loss of bone density or even cause some forms of cancer and start neurological disease.

 

*Villi serve in the nutrient absorption in the small intestine.

 

What are the symptoms ?

There is a difference between being allergic to gluten and having a sensitivity to it. When you have celiac disease, you can have the following symptoms :

  • Abdominal pain
  • Nausea
  • Headaches
  • Fatigue
  • Bone or joint pain
  • Heartburn
  • Mouth ulcers
  • Anemia

 

Treatment ?

There is no drug that can treat celiac disease. The only way is to have a strict gluten-free diet.

But a strict gluten-free diet does not stop at avoiding pasta, bread, cereals… but also some types of mayo, ketchup, ice cream, root beer, veggie burgers, vodka … and EVEN shampoos, cosmetics, medication…ohh yes!
