Quinoa Greek Salad

With its fresh flavours from delicious ingredients, this salad will transport you straight to the Greek islands! With our GoGo Quinoa pilaf as the perfectly seasoned base, you can mix and match your favourite veggies to make this salad your own. 

Serves 4


  • 1 box GoGo Quinoa quinoa and basmati pilaf
  • 1 English cucumber, chopped
  • 2 red peppers, seeded and halved
  • 1 pint cherry tomatoes, halved
  • 1/2 cup vegan feta
  • 1/2 cup marinated artichokes
  • 1/4 cup olive oil
  • 1/4 cup chopped fresh dill
  • 1 tablespoon thyme, chopped
  • 1 tablespoon mint, chopped
  • 1 lemon, zest and juice
  • 1 teaspoon GoGo Quinoa Andean pink salt
  • 1 tablespoon maple syrup
  • Black pepper


  1. Prepare the pilaf according to the directions on the box. While it’s cooking, preheat oven to 450 degrees.
  2. Place the red peppers, skin side up on a parchment lined sheet pan. Lightly brush them with olive oil and bake until the skin is wrinkly and charred about 20 minutes.
  3. Remove the peppers from the tray and place them in a bowl and cover with some foil. Let them sit for 30 minutes until they are cool enough to handle. Peel and discard the skin and roughly chop the peppers.
  4. To make the dressing, whisk the oil, dill, thyme, mint, lemon zest and juice, salt, honey and black pepper together in a small bowl.
  5. In a large mixing bowl, combine the cooled pilaf, red peppers, cucumber and tomatoes. Pour the dressing over and stir until evenly coated.
  6. Sprinkle the feta and artichokes on top. Garnish with more fresh herbs.
  7. Serve immediately or chill until ready to serve.
