Vegan Chocolate Hazelnut Torte

This is a decadent dessert that no one will believe is gluten free and vegan. No one will believe there is tofu and quinoa in it either!

makes one 9-9½ tart pan with removable bottom or a 14 inch rectangular tart with removable bottom

INGREDIENTS

for the chocolate biscuit crust  

for the filling

  • 13 ounces of dark chocolate or semisweet vegan chocolate or chocolate chips (dark chocolate for a richer filling)
  • 13 cup of hazelnut liqueur (we used Frangelico)
  • 1 tsp pure vanilla extract
  • 1 lb of silken tofu – drained
  • 1 tbsp of maple syrup
  • Chopped hazelnuts to garnish tart with and make it even more festive with some pomegranate (we also like to serve it plain with some coconut whip)

Cream topping

  • 1 can coconut cream, set overnight in the fridge
  • 3 Tbsp. powdered sugar (optional)
  • 1 tsp. vanilla extract

INSTRUCTIONS

  1. Place a few layers of paper towels on top of a cutting board or you can use a clean dish towel. Place the tofu over it. Then place a large plate over the tofu and one or two cans of tomatoes or beans on top as weights and let the tofu drain like that while you prep the crust.
  2. Preheat oven to 350 ° F
  3. In a food processor or high speed blender pulse the cookies and sugar combined until they are a fine textured crumbs. (No electronic gadgets around no problem – stick them in a sealable plastic bag and use a rolling pin to crush them into crumbs)
  4. Drizzle in the coconut oil and pulse to combine or stir it in if doing manually. Test the texture. When pressed to the side of the food processor or bowl they should hold. If they don’t then add more coconut oil 1 tbsp at a time until you get the consistency you want.
  5. Pour mixture out into tart pan and press it firmly and evenly along the bottom of pan and up the sides of it
  6. Bake for approx 15-20 minutes until it’s appears dry. It may still be soft but it will harden as it cools. Remove from the oven when done and let cool completely.

While the tart crust cools prepare the filling

  1. Prepare a double broiler (metal bowl set over simmering water) to melt your chocolate chips along with the liqueur and vanilla extract. Stir continuously until chocolate is melted and smooth. Remove from heat and set aside.
  2. Place your tofu, maple syrup along with the chocolate mixture in a food processor or high speed blender and process until smooth for approx 1 minute.
  3. Pour the filling into the tart crust and smooth with a metal spatula.
  4. Refrigerate for at least two hours or until the filing is firmly set.
  5. Serve garnished with chopped hazelnuts. 

Recipe Notes

* You may need more coconut oil if you are using regular chocolate wafer biscuits. The ones I used have oil in them already and chocolate chips which moisten the crumbs slightly even before you add the oil to them that’s why I was conservative with the oil in this recipe.
