Warm quinoa salad

Quinoa and vegetable salad with homemade dressing


  • 1 cup quinoa (half cup white quinoa and half cup black quinoa)
  • 2 cups water
  • 1/4 teaspoon salt
  • 2 garlic cloves crushed
  • 1 cup snow peas
  • 1 red bell pepper
  • 1/2 cup shredded carrots
  • 1 cup cherry tomatoes
  • 2 tablespoons of coconut oil (you can use any other oil as well)

For the dressing:

  • 1/4 cup tamari sauce
  • 2 table spoon olive oil
  • 1 tablespoon rice wine vinegar
  • 2 tablespoons chopped green onion
  • 1/4 cup chopped cilantro
  • 1/4 teaspoon grated ginger
  • Pink salt to taste


  1. Cook Quinoa as directed.
  2. Cut the peppers in stripes, crush garlic, add snow peas and sauté at medium high in coconut oil until slightly roasted.
  3. Place the quinoa in a large bowl and add the roasted vegetables, carrots, and cherry tomatoes. Set aside.
  4. In a small bowl, whisk together the tamari sauce, olive oil, rice wine vinegar, green onions, cilantro, ginger and pink salt.
  5. Pour the dressing over the quinoa salad and stir to combine.
  6. If you are not vegetarian, you can add any leftover cooked chicken or meat.
