Black Quinoa, Avocado & Mango

INGREDIENTS

  • 1 cup of black GoGo Quinoa
  • 1 cup of orange juice and 1 cup of water (to cook the quinoa)
  • 2 avocados
  • 2 mangoes, cut in cubes
  • 1 small red bell pepper, diced
  • 1 small orange or yellow bell pepper, diced
  • 1 clove of garlic
  • 2 or 3 finely chopped green onions
  • Fresh cilantro, minced
  • Pink salt
  • Juice of 1/2 lemon
  • Olive oil, to taste
  • 1 tablespoon of powdered sumac

INSTRUCTIONS

  1. Toast the quinoa in a bit of olive oil, add 1 cup of orange juice and 1 cup of water and cook according to package instructions.
  2. Cut and mince vegetables and herbs, reserve.
  3. When the quinoa is cooked, pour in a mixing bowl and mix with salt and garlic.
  4. Let stand.
  5. Add the rest of the ingredients and mix well. Cut avocados in half and serve on top of the salad. Drizzle with olive oil and sprinkle with sumac.
