Earthy GoGo Quinoa fall salad

These bites are the perfect finger food for any party. Filled with vegetables, a bit of vegan parmesan and a crunchy coating – your guests will ask for more!

INGREDIENTS

Salad

  • 1.5 cups quinoa GoGo Quinoa
  • 1/2 cup dried cranberries
  • 1 cup cooked chickpeas
  • 1 cup apple, bite size
  • 1 cup roasted butternut squash
  • 1/2 cup red pepper, small dice
  • 1 cup purple cabbage, thinly sliced
  • 1 cup fresh cilantro, chopped
  • 1/3 cup roasted pumpkin seeds

Dressing

  • 1/2 tbsp minced garlic
  • 2 tbsp curry powder
  • 1/4 cup sunflower oil
  • 1.5  tbsp maple syrup
  • 1/3 cup wheat free tamari
  • 1/3 cup apple cider vinegar

INSTRUCTIONS

  1. Cook quinoa as directed.
  2. Set aside and let it cool.
  3. In medium size bowl mix all ingredients.
  4. In a small bowl whisk together the dressing ingredients.
  5. Toss and serve.
  6. Enjoy !
