Quinoa & Fusilli Confetti Salad

  • 1 bag of GoGo Quinoa Fusilli
  • 1/4 cup of cooked red GoGo Quinoa
  • 1 yellow bell pepper, in small cubes
  • 1-2 medium carrots, shredded
  • 1 branch of celery, in small cubes
  • Finely chopped parsley, to taste
  • Olive oil, to taste
  • Fresh lemon juice, to taste
  • Salt and pepper to taste


  1. Cook the GoGo Quinoa pasta according to package instructions. Once cooked, set to the side to cool.
  2. While the pasta is cooling, chop the bell pepper, carrot, celery and parsley.
  3. Add the bell pepper, carrot, celery, parsley, red GoGo Quinoa, salt and pepper to the pasta. Mix well.
  4. Drizzle with fresh lemon juice and olive oil. Mix once more.
  5. Serve at room temperature or chilled.
