Super Grain Thai Salad

For 3-4 portions

INGREDIENTS

The salad:

  • 1 box of super grain spaghettini
  • 1 cup of cooked quinoa (sprouted tri-color)
  • 1/2 cup of sprouted lentils (you can cook them with the quinoa)
  • 2 cups finely chopped Napa cabbage
  • 1 1/2 cup of grated carrots
  • 1 red pepper cut into thin slices
  • 1 cup of edamame
  • 3-4 scallions
  • 1 cup of finely chopped cilantro

 Thai sauce:

  • ¼ cup almond butter (or alternative butter: peanut, tahini, sunflower)
  • 2 tbsp. of rice vinegar
  • 2 tbsp. of lime juice
  • 3 tbsp. of vegetable oil (or 1 tablespoon sesame oil + 2 tablespoons vegetable oil)
  • 1 tbsp of tamari
  • 2 tbsp. of maple syrup
  • 2 garlic cloves
  • 3 cm of grated fresh ginger
  • 1 tsp. of salt
  • ¼ tsp. of chili flakes

INSTRUCTIONS

  1. Cook the pasta following the directions on the package.
  2. Rinse with cold water.
  3. Mix all the ingredients of the salad together.
  4. In a high speed blender, mix all the ingredients for the sauce.
  5. Combine sauce and veggies together and serve.
