Vegetable pizza with a quinoa and cauliflower crust

The famous cauliflower crust pizza revisited! This recipe does not contain eggs or dairy products. The quinoa makes for a crunchy crust!

For one pizza (8 slices)


The pizza crust

The toppings

  • 100 ml organic tomato sauce
  • ½ zucchini, cut into ribbons
  • ¼ pepper of your choice, sliced
  • 1 handful of parsley and/or fresh basil, finely chopped
  • ½ yellow onion, finely chopped
  • 5 to 6 organic cherry tomatoes, halved
  • 2 garlic cloves, finely chopped
  • 2 pinches of cayenne pepper powder (optional)
  • Spicy oil (optional)
  • Salt and pepper


  1. Soak the quinoa in 400 ml of water for 4 to 8 hours (or overnight in the refrigerator), drain.
  2. Prepare chia eggs by combining 4 tbsp water with the chia seeds, set aside for 20 minutes.
  3. Cut the cauliflower roughly. Chop finely in a food processor (if you do not have a food processor, you can grate the cauliflower using a cheese grater). The goal is for the cauliflower to have a texture similar to snow. Then add the quinoa. Mix a few seconds. Cook for 4 to 6 minutes in the microwave or in a non-stick frying pan.
  4. Remove water from the quinoa cauliflower mixture using a very fine cheese cloth or fabric cloth. Strain as much water out as possible by forming a bundle with the fabric and squeezing (* It is important to wring well, if there is too much water left over the crust may not hold together).
  5. In a bowl, combine the quinoa cauliflower mixture, parsley, garlic, salt & pepper (to taste). Finally, add in the chia eggs and mix.
  6. On parchment paper-lined pizza pan, spread the pizza crust mixture so that it forms a thin layer.
  7. Cook the crust in the oven at 350ºF (180ºC) for 20 minutes or until the crust is golden brown.
  8. In the meantime, prepare the pizza toppings.
  9. Remove the crust from the oven and garnish with toppings. Put back into the oven for 10 to 15 minutes.
  10. Garnish with fresh herbs, cut into slices and serve.
