Andean Mix Salad with roasted peppers & mushroom

Ingredients

  • 1 cup Granissimo Andean Mix and pumpkin seeds
  • 2 cups water
  • 2 red peppers cut in big chunks
  • sliced mushrooms
  • 2 garlic cloves chopped
  • Fresh chopped cilantro
  • Olive oil
  • Pink Salt
  • A few cooked asparagus for decoration- Optional

Instructions

  1. Cook Granissimo Andean Mix as directed. Meanwhile sauté the mushrooms and garlic in olive oil and in a separate pan the peppers in olive oil until they are soft and a bit caramelized.
  2. Once the Granissimo is cooked, salt to taste and mix with chopped cilantro.
  3. Serve with the mushrooms and peppers on the side.
  4. You can add a few cooked asparagus for decoration. Enjoy!
