Apple and chocolate chips cake

Delicious cake for apple season

Ingredients

3 eggs (or vegan alternative)
6 apples, diced
1 1/2 cups sugar
1 cup chocolate chips
1 cup vegetable oil or liquid coconut oil
2 1/4 cups GoGo Quinoa Pancake Mix
Half teaspoon salt
Half teaspoon baking powder
1 tablespoon cinnamon
2 tablespoons chia seeds
1 tablespoon vanilla extract

Instructions

  1. Preheat oven to 350 ºF.
  2. Beat the eggs with the sugar until mixture becomes creamy; add the oil and continue beating. Add the pancake mixture with salt, baking powder, cinnamon, chia and vanilla and beat well.
  3. Add chocolate chips and apples.
  4. Grease a cake pan (rectangular); or line with parchment paper.
  5. Pour the mixture into the pan and bake for 45 minutes or until knife inserted vertically inside the cake comes out clean.
