Apple and ground cherry crumble

A hot crumble is a great way to enjoy local fruits! Have you heard of ground cherries? They’re related to tomatoes – cousins, if you will.

For 6 to 9 portions

Ingredients

  • 1 ¼ cup of oat flakes
  • ¼ cup of all purpose flour
  • 3 tbsp of white quinoa, raw and rinsed
  • 1/3 cup of cane sugar
  • 1/3 cup of semi-solid coconut oil
  • 4 apples
  • 1 pint of ground cherries
  • 1 tsp of ground cardamom
  • 1 tsp of maple syrup

Instructions

  1. Preheat the oven to 350°F.
  2. In a bowl, combine the oat flakes, flour, raw rinsed quinoa, sugar and coconut oil until a mealy texture is obtained.
  3. Cut the apples into cubes and the ground cherries in half and add to the bowl.
  4. Add the cardamom and maple syrup, and mix.
  5. Place the mixture in the bottom of a greased baking pan and bake for 30 to 40 minutes.
