Big K burger & Quinoa fries

For 6 to 8 burgers

Ingredients

PATTIES

  • 2 cups of mushrooms cut finely 
  • 1 cup of broccoli, cut finely  
  • 1/2 cup of red onion, finely cut 
  • 1 Chia egg (1 tbsp chia in 3 tbsp of water)
  • 1 tbsp vegan / gluten-free Worcestershire sauce 
  • 2 tbsp minced garlic 
  • 3/4 cup of nutritional yeast 
  • 2 cups black beans 
  • 1/2 cup cooked Kaniwa 
  • 1/2 cup cooked royal red quinoa 
  • Breadcrumbs 
  • 1/3 cup of fresh parsley minced
  • 1 tbsp liquid aminos 

FRIES

  • 5 cups of water or broth 
  • 2 cups of chickpea flour 
  • 1 cup of quinoa flour 
  • 1 tbsp of cumin 
  • 1 tbsp turmeric 
  • 1 tsp salt 

BIG K SAUCE

  • 1 cup vegan mayo 
  • 1 tbsp relish 
  • 2 tsp white vinegar 
  • 2 tsp yellow mustard 
  • 1 1/2 tsp onion powder 
  • 1 1/2 garlic powder 
  • 1/2 tsp smoked paprika 

 

Instructions

The Burger 

1- Drizzle some oil in a pan, cook the onion and garlic until golden. Add the mushrooms, let cook until 3/4 of the water is evaporated. Then, add the broccoli. Add the liquid aminos and the Worcestershire sauce. 

2 – In a mixer, mash the beans. 

3- In a large mixing bowl, mix all the ingredients together until they are well combined add some breadcrumbs to help the mixture be less humid

4- Create the paddies and cook them in a pan with some oil.

The Chickpea and quinoa fries

1- Boil the water, add the spices and then the flour. Mix well for 2-3 minutes until there is no more lumps. 

2- Pour the mixture in an oven tray. Let sit for 30 minutes 

3- Cut the fries and deep fry them.
