Black quinoa and blueberry Pudding

For 3-4 people

Ingredients

Toppings: Quinoa puffs, maple flakes, dried coconut, fruits…

Instructions

  1. Just like you do with regular quinoa, rinse the grains through a small sieve to remove the bitter residue before cooking.  
  2. Add 1.5 cups water and cook the quinoa until tender – Once the quinoa is cooked, it will look fluffy!
  3. While the quinoa is cooking, prepare the base for the pudding on the stovetop.  Add the coconut milk and the soymilk to a sauce pan, and heat over medium-high heat.  Add 1/4 cup maple syrup or agave nectar and stir until melted.
  4. Bring the milk mixture up to a simmer.  Add the cooked quinoa and stir to combine. Continue to stir over medium-high heat for a few minutes, until the mixture begins to thicken.
  5. After a few minutes, mix in the blueberries and remove from the heat. Add the Chia seeds and mix well. 
  6. Transfer to a shallow bowl, and refrigerate for several hours until chilled and thickened.
