Blueberry quinoa salad

Sometimes what you need is a fresh, tasty and super easy meal!  Here’s one way to bring your Royal quinoa leftovers to life. 

Yields 1 to 2 portions (or 3 to 4 appetizers) 

Ingredients

Blueberry balsamic dressing

  • 2 tbsp of olive oil
  • 2 tbsp of blueberries
  • 2 tbsp of balsamic vinegar
  • 1 tbsp of maple syrup
  • 1 tsp of Dijon mustard
  • pinch of pink salt

Instructions

  1. Cook your Organic White Royal quinoa following the package’s instruction.
  2. Wash and dry your greens.
  3. Combine all of the dressing ingredients in your mixer, blend until smooth, taste it, add that little bit of extra salt if it needs a bit more love.
  4. Add extra blueberries to your greens, pour your dressing.
  5. Toss like the passionate person that you are, really give it all you’ve got.
  6. Place your salad on top of your Royal Quinoa.
  7. Enjoy, you made something special today.
