Chickpea cookie dough

Is there anything better than cookie dough? Of course not! Now, what if we told you there was a magical recipe for good-for-you, guilt-free, flavourful, nutritious cookie dough? You might not believe us, but we dare you to try it. 😉 

For 12 cookie dough scoops

Ingredients

  • 3 cups of canned chickpeas, drained and rinsed
  • 1/2 cup of tahini
  • 3/4 maple syrup
  • 1 tsp vanilla extract
  • 1 tsp of pink Andean salt
  • 1 cup of blended Gogo Quinoa oat flakes
  • 1/4 milled flaxseeds
  • 3/4 cups semi-sweet chocolate chips

Instructions

  1. Blend oats in a dry blender until you obtain a fine texture.
  2. Add tahini, rinsed and drained chickpeas, maple syrup, vanilla extract and salt to your blender. Blend till smooth, remove and set aside.
  3. Combined oat flour and flaxseeds.
  4. Mix your dry and wet ingredients, then stir in chocolate chips.
  5. Transfer into a jar and store in the fridge for up to a week.

Add extra oat flour to make it more dough like and roll into energy balls, or bake for 20 min at 350 F and serve with plant-based ice-cream!
