Chickpea GoGo Quinoa Stir Fry

Ingredients

1 20-oz. can chickpeas, drained and rinsed

3/4 cup GoGo Quinoa Red grains

olive oil, plus more if needed

2 ripe tomatoes (or 1 cup of canned tomatoes in chunks)

2 large clove garlic

2 medium carrots

fresh parsley

1 teaspoon turmeric (mixed with a little black Pepper)

1 bell pepper (red or half red and half green)

1 small piece of ginger fresh

TO TOP:

2 radishes, cut into thin strips

3 green onions, roughly chopped

fresh cilantro chopped

black & white sesame seeds

Serve with tahini sauce (optional)

Instructions

Peel and cut tomatoes in chunks (or use canned tomato)

Heat olive oil to a large sauce pan (or a wok) over medium to medium-high heat and add the tomatoes and the piece of fresh ginger.

Add peppers cut in quarters, carrots, garlic, and a small bunch of fresh flat parsley leaves in a food processor and pulse until it is chopped.

Add mixture in the pan and sauté until about 10 minutes stirring often. Add curcuma and black Pepper.

Add chickpeas to the food processor and pulse until it looks like rice. Don’t over process it or you’ll have mashed chickpeas. 

Add riced chickpeas and quinoa. You can add a bit more olive oil here to help it ” fry.”

After a minute or so, add 1.5 cups of water (or broth), bring to a boil stirring occasionally and reduce heat. Cook until all liquid is absorbed (12 to 15 minutes)

Remove from heat, season to taste and scoop into bowls. Top with radishes, green onion, fresh cilantro and sesame seeds.

You can serve this with a spoon of tahini sauce and a fresh salad on the side.
