Chocolate Orange & Quinoa Brownies

A classic holiday flavour – Orange and Chocolate.  Our Chocolate Orange Quinoa Brownies are delicious and gluten free!

Ingredients

Portions: 9

  • ½ cup White Quinoa Royal
  • ¾ cup sugar
  • ½ cup cocoa powder
  • 1 tsp baking powder
  • Juice and Zest of 1 orange
  • 3 tablespoons of Gluten Free Flour
  • 2 tablespoons oil
  • 2 large eggs
  • 1 tsp vanilla

Instructions

  1. In a small pot, bring 1 ½ cups of water and the quinoa to a boil.  Reduce heat and let simmer, covered, for 15 minutes.  Remove from heat and let cool to room temperature.
  2. Preheat over to 350F. Spray 8-inch square metal cake pan with cooking spray.
  3. Place quinoa, sugar, cocoa, baking powder, orange juice, orange zest, GF flour, eggs, oil and vanilla in food processor. Mix until smooth for about 1 minute.  Pour into an anti-adhesive 8-inch square pan.
  4. Bake for 30-35 minutes or until toothpick inserted in the center of the brownies comes out clean.
