Cinnamon Swirl Quinoa Pancakes

Yield: 10 – 12 pancakes

Ingredients

For the pancakes:

For the cinnamon swirl:

  • 2 tablespoons coconut oil/vegan butter, melted
  • 1/4 cup sugar/coconut sugar
  • 1 tablespoon cinnamon

Instructions

  1. Preheat a skillet over medium-low heat.
  2. Whisk together pancake ingredients.
  3. In a separate bowl, mix together cinnamon swirl ingredients. Add to a plastic squeeze bottle and set aside.
  4. Grease skillet with cooking spray. Scoop 1/4 cup of batter onto skillet and using the squeeze bottle create a spiral with the cinnamon swirl filling on top of each pancake.
  5. Cook until bubbles begin to form, about 2 – 3 minutes. Flip and cook for another 1 – 2 minutes. Transfer to a wire rack and repeat previous step until no batter remains.
  6. Serve warm with maple syrup and a pad of vegan butter.
    And of course, enjoy!

Notes:  I had extra filling left over to I filled the swirls I had created on my pancakes with the additional filling. This is optional, but delicious!
