Creamy Quinoa with Sweet Potato

Ingredients

125 g of quinoa (or 5 Grain Mix)

1 sweet potato

2 green onions

500 ml of coconut cream

1 teaspoon of curry

1 pinch of garam masala

1 pinch of cinnamon

Salt and pepper to taste

Olive oil for cooking

Instructions

  1. Cook quinoa according to package instructions. Reserve.
  2. Peel the sweet potato and cut in small dice.
  3. Chop the green onions in small pieces and heat some olive oil in a pan.
  4. Cook the green onions, the sweet potato, a pinch of curry and a pinch of masala.
  5. Cook for ten minutes on medium heat and add half of the coconut cream and the rest of the spices.
  6. Simmer for 20 minutes and gradually add the rest of the coconut cream.
  7. Once cooked, add the quinoa and season with salt and pepper to taste.
