Dhal GoGo Quinoa

Ingredients

1 onion, thinly chopped
2 medium tomatoes, diced
30 ml (2 tbsp.) Butter
3 garlic cloves, thinly chopped
1 piece of 2.5 cm (1 inch) fresh ginger, peeled and cut in half
15 ml (1 tbsp.) Ground turmeric
15 ml (1 tbsp.) Garam masala
5 ml (1 tsp.) Ground cumin
a pinch (to taste) of crushed red pepper flakes
1 liter (4 cups) of water (or half water and half vegetable broth)
1 cup of red lentils (you must rinse well)
1/2 cup of red quinoa (or white)
Salt and pepper
Chopped fresh cilantro for garnish, and chia seeds.

Instructions

  1. In a saucepan, brown the onion in butter. Add salt and pepper.
  2. Add the diced tomatoes and sauté a few minutes. Add garlic, ginger, spices and cook for 1 minute, stirring.
  3. Add water, quinoa and lentils and bring to a boil.
  4. 

Simmer gently, uncovered, stirring frequently, about 20 minutes or until the quinoa and lentils are very tender.
  5. Remove the ginger pieces. Adjust the seasoning.
  6. Serve with basmati rice. Garnish with yogurt and chopped fresh coriander and a handful of chia seeds. Serve with cauliflower (steamed) and lime wedges.
