Festive Tex-Mex Burger

What better way to celebrate the arrival of the month of June than with a satisfying burger, with just the perfect amount of spice? This burger is quick and easy to prepare and is the ideal dish to enjoy with friends and family this summer. We recommend 3 simple salsas to elevate it even more!

Ingredients

For the burger

GoGo Quinoa Tex Mex Burger mix
Gluten free burger buns (we used O’doughs)
1 avocado (for garnish)
1-2 tomatoes, sliced (for garnish)
Fresh lettuce (for garnish)

Chef Veganessa’s Fiesta Salsa

2 cups tomatoes, small dice
1 cup pineapple, small dice
½ cup bell pepper, small dice
2 tbsp. red onion, diced
1/2 cup fresh coriander leaves, chopped
1 garlic clove
¼ tsp. dry oregano leaves
1 tbsp. olive oil
3 tbsp. fresh lime juice
1 tsp sea salt
Chilli flakes

Homemade Guacamole
1 ripe avocado
Fresh lime or lemon juice, to taste
Salt and pepper, to taste
Fresh cilantro, finely chopped (optional)

Chipotle sauce by Chef Miguel
2 tablespoons of mayonnaise or veganaise
1 teaspoon of water
1 teaspoon lime juice
1 pinch of sugar
1 pinch of pink salt
1 pinch of chipotle powder
1 pinch of cumin powder
1 pinch of dried thyme

Instructions

1. Cook the burger according to package instructions.
2. Prepare the salsas and slice the toppings.
3. Garnish the burgers to taste and enjoy!
