Ginger & Sesame Quinoa Salad

We had so much fun at the second edition of Montreal’s Vegan Festival last Saturday! A lot of you were asking for the recipe of the salad we were sampling that day, so here it is!

This flavourful dish is a creation of the very talented Chef Veganessa, who was in the kiosque next to us at the Festival.

Ingredients

FOR THE SALAD:

White Royal GoGo Quinoa

Red & orange bell peppers, diced

Broccoli, in small florets

Black beans

Sesame seeds (white or black)

Freshly chopped cilantro

FOR THE DRESSING:

Sesame oil

Wheat free Tamari

Lemon juice

Brown rice vinegar

Maple syrup

Garlic

Ginger

Instructions

  1. Cook the White Royal GoGo Quinoa according to package instructions.
  2. While the quinoa is cooking, dice the vegetables and lightly steam the broccoli (optional).
  3. To make the dressing, mix together the sesame oil, wheat free tamari, lemon juice, brown rice vinegar, maple syrup, ginger and garlic.
  4. Combine all the ingredients together and mix well.
  5. Serve at room temperature or chilled with some fresh cilantro and sesame seeds.
