Gluten Free Banana Muffins

These muffins are dairy free and gluten free and use up your old brown bananas!   Perfect for a snack, breakfast and lunch boxes 🙂

 

Ingredients

Portions: 12 muffins

  • 4 ripe bananas, mashed
  • 2/3 cup sugar, honey or maple syrup
  • ¾ cup olive oil
  • 2 eggs*
  • 2 cups GoGo Quinoa Pancake Mix (or GF flour mix)
  • ¼ cup GoGo Quinoa Hot Cereal Mix (or pure oats)
  • ½ tsp salt
  • 1 tsp. baking soda
  • ½ tablespoon baking powder
  • 1 tsp. cinnamon
  • 1 tsp. pure vanilla extract

*Vegan alternative: 2 tablespoons of chia seeds with 6 tablespoons water

Instructions

  1. Preheat oven to 350F. Line muffin tins with paper cups.
  2. In a bowl, mix the dry ingredients: the Pancake mix (or GF flour), hot cereal mix (or oats), salt, baking soda, baking powder, and cinnamon. 
  3. In a separate bowl, mix the bananas, sugar, oil, eggs (or vegan alternative) and vanilla.
  4. Incorporate the dry ingredients until batter is smooth.
  5. Divide the batter equally into the muffin tin.
  6. Bake for approximately 25-30 minutes or until golden brown and a toothpick inserted in the center of the cake comes out clean.
