Gluten Free Gingerbread Cookies

Gluten Free Gingerbread Cookies

Ingredients

2 1/2 cups quinoa flour

1 Tbsp ground organic cinnamon

2 tsp ground organic ginger

1 tsp baking soda

1/4 tsp ground organic nutmeg

1/4 tsp Andean pink salt

1/3 cup butter, softened

3/4 cup brown sugar

1 egg

1/4 cup raw cane sugar

2 Tbsp maple syrup

1/2 cup water

Instructions

Preheat oven to 375°F.

In a bowl, combine the quinoa flour, the cinnamon, the ginger, the baking soda, the nutmeg and the pink salt.

In another bowl, beat the butter and the sugar until it becomes fluffy. Beat in the egg and maple syrup. Beat in the flour mixture, 1/4 cup a time until all the mixture is well blended. Start adding the water, you might not need to use the 1/2 cup of water so add 1 Tbsp at a time until the dough is well blended and stiff.

Divide the dough into equal sized balls, Roll each ball flat – 1/4″ thickness is recommended. Use cookie cutters to get the desired shapes. Put them on a baking sheet and bake for 8 to 10 minutes.

Let cool and add icing if desired.
