GoGo Quinoa Banana & buckwheat Muffin

For 9 muffins

Ingredients

• 1 egg or Chia egg (1 Tbsp Chia seed meal + 2 1/2 Tbsp water)

• 3 medium ripe bananas 

• 1 Tbsp of baking powder

• 1 tsp baking soda

• 3 Tbsp grape seed or coconut oil 

• 1/4 cup coconut sugar or regular sugar

• 1/4 cup packed brown sugar

• 2 1/2 Tbsp maple syrup

• 3/4 tsp pink mountain salt 

• 3/4 cup unsweetened plain almond milk (or other milk)

• 1 1/4 cup almond or cashew meal

1 1/4 cup GoGo Quinoa Pancake mix  

• 1/3 cup of cooked Organic Royal white quinoa 

 1/3 cup of GoGo Quinoa Buckwheat flakes 

 

Instructions

1. Preheat your oven to 375 degrees F.  Line a muffin tin with paper baking cups.

2. In a large mixing bowl, mix the water and chia seeds together (or 1 egg). Wait 3 minutes. Then add the bananas, the baking powder, and baking soda and mash well.

3. Add the coconut sugar, the brown sugar and the maple syrup. Add a pinch of pink mountain salt, the oil and whisk vigorously to combine. Add the almond milk and mix well.

4. Add almond or cashew meal, the GoGo Quinoa pancake mix (or all purpose flour) the cooked quinoa and the buckwheat flakes, stir until combined.

5. Fill your muffin tins up to the top 

6. Sprinkle your favorite toppings: nuts, seed, bananas, rolled oats, quinoa flakes, sugar …

7. Bake for 25-30 minutes or insert a toothpick into the center of a muffin and see if it comes out clean. Remove from oven and let cool in the tin for 5 minutes. Then remove from tin and let cool completely on a cooling rack.
