GoGo Quinoa Cranberry & Chestnut Stuffing

Ingredients

Portions: 6-8

  • 2 cups of GoGo Quinoa 5 Grain Medley
  • 4 ½ cups of vegetable broth
  • 2 tablespoons of olive oil
  • 2 cups of roasted chestnuts, chopped in quarters
  • ½ cup of GoGo Quinoa Burger Mix (or Gluten Free bread crumbs)
  • ½ cup of dry cranberries
  • 1 small red onion, chopped
  • 2 cups of chopped leeks
  • 2 celery stalks, chopped finely
  • 2 garlic cloves, chopped finely
  • 1 tablespoon of turmeric
  • 1/2 cup of fresh parsley, rosemary, and thyme
  • Zest and juice of one orange

Instructions

  1. In a medium pot, cook the GoGo Quinoa 5 Grain Medley (as directed on the package) in 4 ½ cups of vegetable broth.
  2. Roast 2 cups of whole chestnuts at 375F until cooked, then remove shell.  When cooled, cut into quarters.  Or add store bought roasted chestnuts to the cooked Medley.
  3. Heat oil in a large pan or skillet.  Brown the leaks, celery, red onion and garlic.
  4. Add the chestnuts, cranberries, the Medley and turmeric and cook for 5 minutes more.
  5. Add the Burger mix (or bread crumbs)
  6. Add the fresh herbs, the orange zest and its juice.  Add salt and pepper to taste.
  7. Cook mixture in a casserole dish and bake at 400F for 10-15 minutes.
  8. Mix and serve.
