GoGo Quinoa Eggplant Parmesan

This gluten free crust can be used for fish, tofu, or zucchini instead of using eggplant.

Ingredients

Serves: 4-5 people as a main dish

  • 3-4 medium sized eggplants, cut into ½-inch slices
  • Olive oil
  • 2 eggs (omit for Vegan option)
  • 2 cups of vegetable broth
  • 1 cup of GoGo Quinoa Burger mix
  • ½ cup of GoGo Quinoa Pancake mix (or favorite flour)
  • Salt and freshly ground black pepper
  • Favorite tomato basil sauce
  • Grated mozzarella cheese (or vegan substitute)
  • Fresh chopped Parsley
  • Optional ½ cup freshly grated Parmigiano-Reggiano, or as needed

Instructions

  1. Preheat oven at 400F
  2. Slice the eggplants into ½ inch slices.
  3. To remove excess water and bitterness from the eggplant, toss eggplant with 2 teaspoons salt in a colander set over a bowl, then let drain 30 minutes. This is called “sweating the eggplant”
  4. In a medium bowl, mix the GoGo Quinoa Pancake Mix (or flour) and the GoGo Quinoa Burger Mix.
  5. In a separate medium bowl whisk the eggs and the vegetable broth (for Vegan option, omit eggs)
  6. Remove excess water and salt from eggplant slices.
  7. Dip eggplant slices in egg mixture (or just in the vegetable broth), then dredge in dry “crumb” mixture, coating well.
  8. Heat oil in a deep 12-inch nonstick skillet over moderately high heat until hot but not smoking, then fry eggplant 4 slices at a time, turning over once, until golden brown, 5 to 6 minutes per batch. Transfer with tongs to paper towels to drain.
  9. Spread 1 cup tomato sauce in bottom of a rectangular 3 1/2-quart (13- by 11- by 2-inch) baking dish. Arrange about one third of eggplant slices in 1 layer over sauce, overlapping slightly if necessary. Cover eggplant with more sauce and mozzarella. Continue layering with remaining eggplant, sauce, and mozzarella.
  10. Optional: Sprinkle top with Parmigiano-Reggiano.
  11. Bake, uncovered, until cheese is melted and golden and sauce is bubbling, 30-35 minutes.
  12. Sprinkle some chopped parsley before serving.
