GoGo Quinoa Minestrone Soup

Ingredients

1 pouch of GoGo Quinoa Minestrone soup

1/2 can of diced tomatoes (or two fresh tomatoes)

1 leek (white part), chopped finely

1 branch of celery, chopped finely

2 garlic cloves, minced

2 potatoes, diced

1 bay leaf

A few leaves of kale, without the stem and chopped

1/4 cup of tri-color quinoa

Chopped parsley

5 cups of water

Olive oil

Pink salt

Instructions

  1. In a large pot, heat the olive oil over medium heat and cook the leek, the celery and the potatoes with the bay leaf.
  2. Add the diced tomatoes and continue to cook for a few minutes.
  3. Add the minestrone soup mix, the quinoa and some olive oil. Cook for 1 more minute. 
  4. Add 5 cups of water and bring to a boil. Stir, reduce heat and simmer for 15 to 20 minutes.
  5. At the end of the cooking process, add the kale, the parsley and add salt to taste.
