GoGo Quinoa stuffed vine leaves

Ingredients

1 cup of white quinoa
1 tomato
1 orange pepper
1 ½ cups of chopped onions
½ cup of vegetable oil
2 or 3 garlic cloves, chopped
1 cup of parsley
2 tablespoons of tomato paste
A little lemon juice.
Andean pink salt
Red pepper
Black pepper
Sumac (optional)
Mix well.

Instructions

(The same stuffing can be prepared with one cup of our Andean Mix and Pumpkin Seeds)

Vine leaves: Cut the base of the stem. Dip in boiling water to soften.
Put the stuffing in the leaves and roll.
Then place the rolled leaves in a saucepan. Pour in the juice remaining from the stuffing. If there is not enough juice (about ½ cup) then pour into the saucepan ½ cup of water with a little oil, salt and lemon juice.
Cover with a dish to prevent the stuffed leaves from moving.
Bring to a boil over high heat and reduce to medium low to simmer for half an hour.
