GoGo Quinoa’s back to school quinoa bar

These nut free – gluten free – vegan back to school bars will be perfect for your children snacks .. or even yours!

Ingredients

1/2 cup extra-virgin olive oil

3/4 cup of maple syrup

2 cups GoGo Quinoa flakes

1/2 cup of cooked GoGo Quinoa Organic Royal Red Quinoa (1/4 dried)

1 tbsp of raw GoGo Quinoa Organic Royal White Quinoa

3 Tbsp of GoGo Quinoa Organic Chia seeds

1 Pinch of GoGo Quinoa mountain pink salt

1 cup of pumpkin seeds and/or sunflower seeds

3/4 cup roughly chopped dried figs

3/4 cup roughly chopped pitted prunes

2 ripe bananas (mashed)

1/3 cup of almond butter or any other nut/seed butter

Instructions

1. Preheat the oven to 400°F

2. Whisk together the olive oil, maple syrup and almond butter in a sauce pan until the nut/seed butter is melted.

3. In a large bowl, mix together all the ingredients.

4. Evenly spread the mixture on a parchment-lined baking sheet

5. Cook for 30 minutes. Cut in bars and let cool completely.

  Store them in the fridge up to 1 week.
