Granissimo with roasted squash, dry figs and maple pecans

Gluten Free & Vegan

Ingredients

(2 servings)

1 cup Granissimo Andean Mix
1 cup of diced squash
1 garlic clove
1/2 onion
2 mini red peppers
1/4 cup of fresh chopped cilantro
a few dry figs
1/2 cup pf pecans of walnuts
Fresh Rosemary or dry Herbes de Provence
Olive oil
Balsamic vinegar
Maple syrup
Pink salt

Instructions

  1. Preheat the oven at 400F. On a baking sheet, place diced squash, peppers, onion, and crushed garlic. Sprinkle with herbs and olive oil and cook about 20 to 25 minutes.
  2. Meanwhile, cook Granissimo Andean mix as directed. Once cooked season to taste.
  3. Caramelize the pecans by roasting them in a pan with a bit of olive oil and maple syrup.
  4. Serve the Granissimo, with the roasted vegetables on the side, and garnish with a few dry figs thinly slides and the caramelized pecans. Sprinkle fresh cilantro and balsamic vinegar and maple syrup over the vegetables. Bon appetit!
