Green Amaranth Falafel

Recipe by The Vegan Bee 

Ingredients

  • 1/3 cup of amaranth flakes
  • 540ml of canned chickpeas
  • 1 cup of parsley
  • 1 cup of cilantro
  • 4 garlic cloves
  • 1 medium white onion
  • 1 1⁄2 tsp of cumin
  • 1 1/2 tsp of paprika
  • 1/4 tsp of cayenne pepper
  • 4-6 tbls of all purpose flour of your choice
  • Salt and pepper

Instructions

  1. Mix all the ingredients in a mixer
  2. Form balls
  3. Cook with some oil, in a non-stick pan, while flattening them
