Green Goddess Super Grains Fusilli Pasta

For 3-4 servings

Ingredients

  • 1 pack of GoGo Quinoa Super Grains Fusilli pasta (227gr)
  • 1 1/2 cup of cherry tomatoes 
  • 1/2 cup of sun-dried tomatoes 
  • 3 cups of baby spinach  

For the Green Goddess sauce: 

  • 1 avocado 
  • 1 cup packed parsley 
  • 1 cup packed cilantro 
  • 3 garlic cloves
  • 2 lime juice
  • 1/2 cup of water
  • 1/2 cup of olive oil 
  • 2/3 cup of pistachios 
  • 1 tsp of pink Andean salt 
  • 1/2 tsp of pepper 

Instructions

  • Cook the pasta following the instructions on the package. Reserve 
  • Cut the cherry tomatoes and the sun-dried tomatoes 
  • Prepare the sauce by mixing all the ingredients in a high-speed blender. 
  • In a large bowl, mix the pasta with the sun-dried and cherry tomatoes, the spinach, and the sauce. 

Enjoy 

 

Optional: Sprinkle some vegan parmesan* 

 

Vegan parmesan*: 

  • 1 cup of cashew 
  • 1/2 tsp of garlic powder
  • 2-4 tbsp of nutritional yeast 

Blend all the ingredients together.
