Hearty GoGo Quinoa lentil soup

Serves 6-8
Preparation time: 15 minutes – Cooking time: 1 hour

Gluten Free & Vegan

Ingredients

1 chopped onion
1 chopped carrot
1 chopped celery stack
0.5 cup of crushed tomatoes or Passata di Pomodoro
1 cup fresh finely chopped cilantro
1 crushed garlic clove
1.5 cups brown lentils
0.5 cup red&white quinoa
0.25 cup of amaranth grain
0.25 cup of rice
2 tablespoons of tapioca flour
1 bay leaf
A bit of olive oil
Spices: a pinch of cinnamon, 1 teaspoon of turmeric and 1 teaspoon of
grounded cumin
Altura table pink salt to taste (only after cooking)

Instructions

  1. In your favorite pot, sauté the onions, carrots, celery with a bit of oilve oil about 5 minutes.
  2. Add the spices (cinnamon, turmeric and cumin) and the tapioca flour and strir well. Add the tomatoes, cilantro, bay leaf and garlic and stir well.
  3. Add lentils, amarath. Add 10 cups of cooled water (or broth). Boil while stirring often (to prevent from sticking at the bottom of your pot ), then reduce heat and simmer covered about 45 minutes stirring from time to time.
  4. Once the soup is cooked, salt to taste just before serving.
