Kaniwa Spring salad

Ingredients

¼ cup kaniwa to cook
Spring salad mix
1 avocado
2 green onions
¼ red onion minced
1 little red pepper
1 handful of toasted pine nuts
1 or 2 blood oranges
½ lime
Cilantro, minced, to taste
1 handful of chia seeds
Olive oil to taste
Pink salt to taste

Instructions

Cook the kaniwa and cool aside. In a salad bowl, mix the salad, the kaniwa and all the sliced vegetables; salt to taste, drizzle the olive oil and lemon juice over the salad and toss to combine. Serve immediately. Enjoy !
