Mac and no cheese

For 2/3 servings

This crazy creamy vegan, gluten-free, GoGo Quinoa Mac and cheese is undeniably divine! Made with an amazing nut free, potato-based cheesy sauce.

Ingredients

  • 1 package of GoGo Quinoa Super Grain Elbow 
  • 1 big fresh tomato
  • 1tbsp. of vegetable oil
  • 1 onion cut into small cubes
  • 1/3 tsp. of Chipotle powder (or chili powder)
  • 1 tsp. of cumin
  • 1 tsp. of paprika
  • ½ tsp. of pepper
  • ½ tsp. of pink Andean salt

Cheese sauce

  • 1 ½ cups of potato, diced
  • 1 cup of carrots, diced
  • ¼ cup of vegetable oil
  • ¼ cup of vegetable milk
  • ¼ cup of dill pickle juice
  • the juice of a lemon
  • 1 big tbsp. of tomato paste
  • 2 tsp. of potato starch
  • 1 large clove of garlic
  • 1 tsp. of onion powder
  • 2-3 tbsp. of nutritional yeast
  • 1 tsp. of pink Andean salt

Instructions

Pasta preparation
1. Cook the pasta according to package directions and rinse with cold water.
2. Cut the tomato and onion.
3. In a skillet, sauté onion in oil until golden.
4. Add the spices.
5. Cook for 5-10 minutes

Preparation of the cheese sauce
1. Boil potatoes and carrots for 5-7 minutes
2. In a high-speed blender, combine all ingredients of the sauce until smooth and creamy.
3.Add the sauce to the cooked onion, then add the pasta and the fresh tomato. Serve immediately.
Option: add fresh green onions just before serving.
