Mediterranean falafel bowl

Savour the Mediterranean without having to get on a flight! This falafel bowl combines flavours from all over to create an appetizing lunch or dinner.

For 2 bowls

Ingredients

Falafels

  • ½ a package of GoGo Quinoa Burger Mix
  • ¾ cup of chickpeas or white beans, cooked, rinsed and strained
  • 1 clove of garlic minced
  • ½ cup of flat leaf parsley

Tahini sauce

  • 2 tbsp of tahini (sesame paste)
  • Juice of 1 lemon
  • 1 tbsp of agave or maple syrup
  • 1 clove of garlic minced
  • salt and pepper to taste

Veggies

  • 2 cups of arugula or mixed greens
  • 1 cup of shredded carrot
  • 1 cup of shredded red cabbage
  • 6 radishes thinly sliced
  • 2 small Lebanese cucumbers
  • 1 ripe avocado cut in half
  • your favourite hummus
  • seeds (examples: sunflower, pumpkin)

Instructions

Falafels

  1. Preheat the oven to 350°F
  2. In a food processor mix all the ingredients together.
  3. Add water to the food processor respecting the quantity stated on the package and pulse to combine.
  4. Scoop out 2 tbsp of the mixture and roll into a ball, flatten lightly. Repeat this step until no mixture remains.
  5. In a non-stick pan, heat up 2 to 3 tbsp of vegetable oil and brown the patties 3 minutes on each side. Transfer to a parchment paper lined baking sheet and cook for 15 minutes.

Tahini sauce

  1. Mix all the ingredients together in a small bowl.
  2. Add a bit of water is the sauce is too thick. Readjust seasoning as needed.

Veggies

  1. In 2 bowls arrange the mixed greens, carrots, cabbage, radishes, cucumbers and avocado.
  2. Add a generous spoonful of hummus and sprinkle with seeds.
  3. Add the falafel patties and top with tahini sauce.
