Mexican Quinoa Salad

Preparation: 30 minutes
Portion: 4 to 6

Can be served in taco shells or with tortillas.

Ingredients

1 cup of white quinoa
2 tomatoes, chopped
1 pepper (green or yellow), chopped
1 can of black beans, drained/rinsed
2 avocados, sliced
4 green onions, chopped
1 cup of hot or mild Salsa
1 cup of chopped cilantro
Optional: Cheddar cheese (or vegan alternative)

Seasoning

A little bit of olive oil
Andean pink salt to taste
A little bit of squeezed lime

Instructions

  1. Cook the quinoa according to the instructions on the package.
  2. While the quinoa is cooking, prepare the rest of the ingredients.
  3. When quinoa is cooked, set aside and let cool.
  4. Add the rest of the ingredients to the quinoa, add the seasoning and mix well.Note: This recipe can be served hot or cold.
    Recommendations: Can we be served in taco shells or with tortillas.
