Morrocan Swiss Chard & Quinoa Soup

4-6 servings

Ingredients

1 head of swiss chard, roughly chopped

4 garlic cloves, crushed

1 small can of white beans

1 small can of cubed tomatoes

1/4 cup of white quinoa (or rice)

1/2 cup of black quinoa

2 tsp of paprika

1 pinch of Cayenne pepper

1/4 cup of vegetable oil

1 tsp of ground cumin

pink salt, to taste

Fresh minced cilantro, for garnish

Instructions

1) Prepare Moroccan paprika seasoning: in a pan, heat the oil and cook the crushed garlic. Add the paprika and cook on high heat for a few seconds. Turn off the heat and add 1 cup of cold water. Let it stand for a few minutes. With a spoon, scoop out the garlic, oil and water on the surface and transfer in a pot.

2) On medium-high heat, add the white beans, cubed tomatoes, white quinoa, black quinoa, cumin, Cayenne pepper and cook for a few minutes.

3) Add the swiss chard and 8 cups of cold water and bring to a boil. Reduce the heat and simmer for 30-40 minutes, stirring occasionally.

4) Add salt to taste and serve with a bit of fresh chopped cilantro.

Suggestion: you can cook some extra white quinoa for garnish.
