MUSHROOM CREAM 2.0

Let’s give a French twist to our Mushroom Cream! 

Recipe by The Vegan Bee 

3-4 Servings

Ingredients

  • 1 pouch of GoGo Quinoa’s mushroom cream (+2 1/2 cups of milk & 1/2 cup of water, as indicated on the packaging)
  • 1 leek chopped
  • 2 cups of portobello mushrooms, chopped (or any other kind of mushroom)
  • 2  bay leaves
  • 2-3 tbsp of fresh parsley chopped 
  • 2 garlic cloves 
  • 2 French shallots 
  • 4 tbsp of white wine 

Instructions

  1. Heat some oil in a soup pot, sauté the shallots, garlic, until golden. 
  2. Deglaze with the white wine, then add the mushroom, and leek. Cook until soft (5-8 minutes)
  3. Add the Mushroom mix, the water, milk, and the bay leaves. Bring to a boil, then reduce the heat and allow to simmer for 20 minutes. Do not hesitate to add more water or milk if you think your soup is too thick. 
  4. Finally, add the fresh parsley and serve
