Peanut Butter and Chocolate Quinoa Cookies

We are pleased to share the recipe of the delicious peanut butter & chocolate cookies that we served at Expo Manger Santé! It is another original creation by our partner, Chef Veganessa. If you were looking for a fun and different way to enjoy more quinoa, this recipe is for you! On top of being extra tasty, these cookies are packed with protein due to the quinoa and peanut butter combo.

 

Warning: When baking these, make sure to prepare a double batch, or they will disappear in a pinch! 🙂

Ingredients

1 cup cooked Royal White GoGo Quinoa, cooled down

1 cup GoGo Quinoa flakes

1 cup natural peanut butter

¾ cup brown sugar

½ cup chocolate chunks

½ cup coconut oil, melted

1 tbsp pure vanilla extract

1 tbsp ground flaxseed

1 tsp guar gum

½ tsp sea salt

*optional

Garnish with raw quinoa and peanuts

Instructions

1) Preheat oven to 325F and line a baking sheet with parchment paper.

2) Mix all ingredients in a medium bowl and scoop into 12 balls. Do not press down on the scoops of cookie dough.

3) Transfer to oven and bake for 18 minutes.

4) After 7 minutes, remove from oven and gently press down and return to oven to bake for the remaining time.

5) Let cool and refrigerate 2 hours before serving.

Tip: Cookies are best served cold.
