Pumpkin Bread
Ingredients
1 can (15 ounces) of pumpkin purée
4 eggs (or vegan alternative)
1 cup apple sauce
2/3 cup water
2 tsp pure vanilla extract
2 1/2 cups sugar
3 1/2 cups of GoGo Quinoa Pancake Mix
2 tsp baking soda
1 tsp salt
2 tsp pumpkin pie spice
Instructions
- Preheat oven to 350 degrees F. Grease a pan loaf.
- Combine pumpkin, eggs (or vegan alternative), apple sauce, water, vanilla extract and sugar until well combined.
- In a large bowl, whisk together the GoGo Quinoa pancake mix, baking soda, salt, and pumpkin pie spice until well combined.
- Stir the dry ingredients into the pumpkin mixture until just blended. Pour batter into the pan.
- Bake in preheated oven for 60-70 minutes or until a toothpick inserted in the center comes out clean.
