Pumpkin Bread

Ingredients

1 can (15 ounces) of pumpkin purée

4 eggs (or vegan alternative)

1 cup apple sauce

2/3 cup water

2 tsp pure vanilla extract

2 1/2 cups sugar

3 1/2 cups of GoGo Quinoa Pancake Mix

2 tsp baking soda

1 tsp salt

2 tsp pumpkin pie spice

Instructions

  1. Preheat oven to 350 degrees F. Grease a pan loaf.
  2. Combine pumpkin, eggs (or vegan alternative), apple sauce, water, vanilla extract and sugar until well combined.
  3. In a large bowl, whisk together the GoGo Quinoa pancake mix, baking soda, salt, and pumpkin pie spice until well combined.
  4. Stir the dry ingredients into the pumpkin mixture until just blended. Pour batter into the pan.
  5. Bake in preheated oven for 60-70 minutes or until a toothpick inserted in the center comes out clean.
