Pumpkin & Quinoa Pancakes

Pancakes with all of the flavors of autumn!

Servings: makes about 8 medium pancakes
Prep Time: 5 minutes
Cook Time: 25 minutes

Ingredients

1 cup GoGo Quinoa Pancake Mix
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 egg (or egg alternative)
1 cup almond milk
1/2 cup pumpkin puree (you can use this recipe or buy it in a can)
1 tablespoon brown sugar
2 teaspoons vanilla extract
A little bit of coconut oil
Chia seeds or pumpkin seeds for decorating
Maple syrup

Instructions

1. Mix the GoGo Quinoa Pancake Mix, baking powder, baking soda, cinnamon and nutmeg in a large bowl.
2. In another bowl, mix the egg (or egg alternative), almond milk, pumpkin puree and brown sugar
3. Mix the dry and wet ingredients together.
4. Heat a pan over medium heat and melt a touch of coconut oil in it.
5. Pour pancake mixture onto the heated pan (about 1/2 cup). Flip pancake when bubbles start t show and edges begin to brown.
