Quinoa and Chickpea Patties

We are glad to share with you the wonderful recipe created by Chef Jonathan Garnier at Expo Manger Santé 2016! These quinoa and chickpea patties are simple to make and are perfect as an appetizer or as finger food at any event.

 

25 to 30 units

Preparation time: 35 minutes

Cooking time: 25 minutes

Ingredients

2 cups water

1 onion, chopped

2 cloves of garlic, chopped

3/4 cups GoGo Quinoa red quinoa or tri-color quinoa (uncooked)

1 cup chickpeas

3 tbsp parmesan cheese, grated (optional)

1 egg (or 1 tbsp flaxseed meal mixed in 3 tbsp water)

2 tbsp cornstarch

1 jalapeno pepper, chopped

1 red bell pepper, chopped

1/4 bunch of parsley, chopped

Goat cheese, cut in thin slices (or any vegan cheese)

Olive oil

Salt and pepper to taste

Instructions

1) In a saucepan over medium heat, add water, onion, garlic and 1/2 cup of quinoa. Keep remaining 1/4 cup of quinoa for later.

2) Cover and cook for 15 minutes. Remove from heat and let cool.

3) With a food processor or blender, blend the chickpeas and the cooked quinoa. Add the parmesan, the egg or flax egg and the cornstarch.

4) Put the mixture in a bowl and add the jalapeño pepper, red bell pepper, parsley, and uncooked quinoa. Season to taste and mix well. Keep in a cool place for 15 minutes.

5) Make some small balls with the mixture. Flatten each ball to make some small patties.

6) In a hot pan on medium heat, cook the quinoa patties in a bit of olive oil until golden brown, around 5 minutes on each side.

7) Place a thin slice of goat cheese or vegan cheese on each patty.

8) Serve the patties with a small green salad.
