Quinoa & beans salad
1 cup of royal white quinoa
1 ½ cup water
1 can of mixed legumes (red beans, white beans, chick peas or other of your choice)
1 small cucumber
red and yellow pepper
1 garlic clove minced
for seasoning add a little olive oil and lemon juice
Pink Salt and pepper to taste.
In a medium saucepan, cook the quinoa in 1 ½ cups of water, until almost all the liquid is absorbed. Put the cooked quinoa aside and let it cool until room temperature. Then add all the other ingredients and mix well. Refrigerate until time to serve.
