Quinoa Bolognese

Gluten Free & Vegan

Ingredients

  • 3/4 cup of white GoGo Quinoa
  • 3/4 cup of brown lentils
  • 2 carrots
  • 1 small onion
  • 3 garlic cloves
  • 1 red or yellow bell pepper
  • 2 celery stalks
  • 1 bottle of tomato coulis
  • 1 can of crushed tomatoes (398 ml)
  • Some red wine
  • 1 bay leaf
  • Some sugar
  • Some parsley and green onion (for garnish)
  • Mushrooms on the side (optional)
  • Parmesan (optional)

Instructions

  1. In a food processor, finely chop the carrots, onion, garlic, celery and pepper.
  2. Cook the vegetable mixture in a bit of olive oil with the bay leaf.
  3. Add the lentils and the rinsed quinoa.
  4. Add the crushed tomatoes, the tomato coulis, the wine and the sugar.
  5. Fill the bottle of tomato coulis with some water, and add to the mixture.
  6. Bring to a boil, and simmer for 30 minutes.
  7. Add salt and pepper to taste.
  8. Serve on your favorite GoGo Quinoa pasta with some parmesan (or vegan option) and some chopped parsley.
