Quinoa Macaroni Salad

Quick and easy gluten free and vegan macaroni salad.  Perfect dish to prepare for a party!

Portions: 4-6 as a side dish

Ingredients

1 box of red & white quinoa macaroni
1 yellow or orange pepper thinly cut
2 chives sliced
2 garlic cloves crushed
10 Cherry tomatoes cut in half
1 cup of chopped fresh parsley and cilantro ( you can also add mint)
Olive oil
Pink salt

Instructions

  1. Cook pasta in a large pot with a lot of boiling water about 5 minutes.
  2. Rince with cold water, drain and reserve in a bowl.
  3. Add oil, all the vegetables, olive oil, season to taste, toss & serve. Bon appetit!

Tip: serve with grilled portobello mushrooms and asparagus.
