Rhubarb crumble

This crumble is made with rhubarb – which is actually a vegetable! What a fun way to eat your veggies, am I right?

For 6 to 9 portions

Ingredients

  • 2 cups of quinoa flakes
  • 1 cup of all purpose flour
  • ½ cup of brown sugar
  • 2/3 cup of vegan margarine
  • 2 tsp of cinnamon
  • 1 tsp of nutmeg
  • 1 tsp of cloves
  • ½ tsp of ginger
  • 3 cups of rhubarb

Instructions

  1. Preheat the oven to 350°F. Grease a baking pan.
  2. In a bowl, combine the quinoa flakes, flour, brown sugar, vegan margarine and spices until a mealy texture is obtained.
  3. Cut the rhubarbe into small pieces.
  4. Press half the flake mixture into the bottom of the greased pan, add the rhubarb on top, place the remaining flake mixture on top of the rhubarb layer and press lightly.
  5. Bake for 30 to 40 minutes or until lightly golden brown.
